New additions to the Spring menu at Catch 35

Fresh new flavors and seasonal seafood have hit Catch 35’s menu! Having a seasonal menu allows Catch 35’s Chefs to upgrade our menu to suit seasonally fresh ingredients and appetites. With spring comes halibut season.
Halibut is available from mid March into the 1st week of May. You will find halibut on Catch 35’s menu only when it is fresh. Here a few interesting facts about halibut….
- Fished from Alaska’s Bering sea
- Spend most of their time on the bottom of the ocean in the deepest and coldest waters
- Swim completely horizontal when they reach adult age
- Halibut eat crabs, shrimp, young cod, haddock, squid, octopus, and herring (providing loads of flavors and nutrients to the halibut filets/t-bones)
Sustainability of Halibut
Pacific halibut come from a well-managed fishery, which has low rates of bycatch and cause little habitat damage.
Textures and flavors of Halibut
The filets and T-bone steaks are firm, white, and savory. Halibut is an excellent source of high-quality protein (as we can see from what they eat referring to #4) and minerals. It is low in sodium, calories, and fat.
Selecting Premium Seafood
When purchasing seafood make sure it is as fresh as possible and in season. Frozen seafood does not taste the same as fish caught the day before. When choosing halibut, the pieces should be almost translucent with no fishy smell and should be shiny.

Catch 35 prepares fresh Alaskan Halibut
Our chefs have whole Alaskan halibut shipped daily from fishing grounds in Alaska’s Bering Sea. The whole halibut is then filleted into two cuts: Filet and T-bone steak.
The filet is a sweet, dense and tender. The T-bone is meatier with a firmer and juicier texture. Each year, our Chef Eddie changes up the preparation for halibut because of its versatile and mild taste.
This year, Catch 35 is giving you 2 new preparations with the spring season in mind. Herb butter-crust and sweet peas round out this year’s preps.

Alaskan Halibut
Filet –Sautéed, sweet pea risotto, Nueske’s bacon and lemon vinaigrette
T-bone –Herb crusted, served with Yukon gold potatoes, peppers & spring onions
