The art of wine!

Wine making is century years old and the enjoyment of it has become something of its own.  Many diners choose wines without always knowing what goes best with what dish.  Restaurants today have such extensive wine lists, diners are unsure which to choose from.  At Catch 35, we have one of those extensive wine lists but we like to guide our diners in making satisfying choices to accompany their meals.

Some of the wines that we serve are boutique wines.  Boutique wines are those that are handmade in small batches at wineries where those working there tend to have passion and pride when making their wines.  One of the hidden gems of boutique wines from our menu that pairs well with the sauteed Chilean Sea Bass topped with a Hawaiian ginger scallion sauce is the 2012 “Charm Acres” Chardonnay, Sonoma Coast (A big impressive Chardonnay, rich with lively acid and great weight).  A red wine connoisseur may enjoy a glass of 2010 “Jolete” pinot noir, Willamette Valley, Oregon ( subtle hints of strawberry, raspberry, and tart cherry leading to refined notes of baking cocoa, cinnamon, and rose petal) which pairs delightfully with our grilled wild Alaskan salmon accompanied with grilled vegetable couscous and watermelon salsa.  A refreshing dish with a complex and unique wine.

There are many boutique wines to choose from our menu but a stand out is the 2009 “Trust” Cabernet Sauvignon, Columbia Valley, Washington (aromas and flavors of cherry, blackberry, mocha and a touch of sage) makes the bone-in-rib-eye drenched in veal demi-glace garnished with zesty mashed potatoes and creamed spinach a well-balanced meal of hearty flavors.  Even though, these boutique wines make Catch 35’s wine list unique we always are looking to add to our list.  Recently we have added “Graham Beck” rose brut, South Africa (pale silver-pink sparkling wine with aromas of raspberries and cherries are lively yet fine in the mouth with subtle red berry flavors enlivened by bright acids).  This palate pleaser sparkling wine complements any of our starters.  With hints of oyster shell and fresh lavender from the wine, starters best suited for this wine vary from our oysters on the half shell to the yellowfin tuna sashimi to Point Judith Calamari.

Going beyond the wine list, Catch 35 in Naperville offers monthly wine dinners that showcases wineries across the nation.  These wines are paired with specialized innovative dishes prepared by Chef Eddie and Chef Jesus for that particular winery.  June 18th is the next wine dinner at the Naperville location and we will be hosting Roth Estate & Lancaster estate wineries (Sonoma and Alexander valley).
