Catch 35 Chicago/Naperville Recipe for Blackening Spice

At Catch 35 Seafood and Premium Steaks Restaurant, we use this rub to enhance the flavors of many of foods from house made potato chips to premium steaks.  As a courtesy from our chef, Eddie Sweeney, use this rub the next time you break out the grill.  This goes on our blackened salmon with sweet chili sauce, blackened sword with red pepper-chipotle sauce.

Dry rub recipe:    Yields enough for about 4 servings
Ingredients:
2 tablespoon Paprika
1 tablespoon Black pepper
2 teaspoon Dried Thyme
2 teaspoon Dried Oregano
1 tablespoon Salt
1 1/2 tablespoon Granulated garlic
1 teaspoon Cumin
2 teaspoon Onion powder
Preparation:
Mix together in a bowl and rub on your favorite meats, fish, vegetables, or cheeses before grilling.
