Recipe for Watermelon Salsa

Chef Eddie recommends the following recipe if you decide to stop by one of Chicagoland’s amazing farmer’s markets:

Watermelon Salsa
Ingredients:
2 cups finely diced seedless watermelon
2 cups finely diced Honeydew melon
1/2 bunch chopped cilantro
1 1/2 jalapenos peppers, seeded and minced
1/4 cup lemon juice
1/4 cup lime juice
1/2 cup orange juice
1/4 cup chopped Thai basil
Salt and pepper to taste
Preparation:
Place all ingredients in a medium bowl and stir well.  Make sure all fresh fruits and vegetables are coated well.  Season to taste with salt and pepper.  Serve at room temperature or chilled.
Tips & Notes:
This salsa can top fish, chicken, turkey, or steak.  You can make tacos, plate it with rice, or top a burger with it.  All of these ingredients can be found at local farmer markets or supermarket.  The fresher the better!
